Smoked Bacon, Leek & Potato soup

Simple meat maths.  Bacon=Good.   2xBacon=Better

This soup was my lunch today.  Mmmnn bacon!
I ended up using double the amount below & it was doubly-delicious.

RECIPE BELOW:
4 medium potatoes (Flowery ones are best.  Waxy ones will make the soup gluey.)

2 medium leeks
150g smoked lardons or bacon
750ml stock
250ml milk


Chop bacon, if using.
Chop Leeks.
Chop spuds into smallish chunks. 
Fry the bacon, leek & potato in a little olive oil until soft but not brown.
Add the stock & simmer until the spuds are cooked through.

Blitz in a blender and return to the pan with the milk.

Stir through and then check seasoning.  Bacon is quite salty so it may only need black pepper.

Now eat, and then sit somewhere quiet and sleep with a smile on your face.

It freezes well too, for a quick lunch another time.  I have to do this because, as usual, I have made far too much.

You could easily use normal bacon, or ham for the same effect, but the smokiness adds loads to this soup.  Some people add cream at the end, I prefer more bacon...
