Bread Sauce with Nutmeg
This is based on a Delia recipe. She loves it with lots of cloves, it's also great with nutmeg and lots of peppercorns, like below.
I've got to remember to cook it more often. It's good winter food, heart-warming stuff. Delicious.
RECIPE BELOW:
Bring the milk to a boil with the onion, peppercorn & bay leaf. Remove from the heat and leave to infuse for as long as you can face. It only needs 15minutes, but will be much better if left for a couple of hours. If you don't have time, keep it on a very low simmer for 15mins.
Then strain out the onion, peppercorns & bay leaf. Add the breadcrumbs to the milk and simmer for 15mins. It can stay like this until needed. Just before serving, beat in the butter & eat.
It's great with the juices from a roast chicken/turkey, or with rabbit, or with game, or by itself if your a fatboy like me.

- 4oz Breadcumbs, (take the crusts off and blitz briefy in a food processor)
- 1 Onion, peeled & halved
- 1 bay leaf
- Some grated nutmeg to taste
- 500ml milk
- 50g butter
- 14 black peppercorns
