Baked Salt Cod with Peppers & Potatoes

This is a David Eyre recipe.  So it goes without saying that it's damn good!
I have added a bit more olive oil, lots more tomatoes, and turned down the oven (fan-assisted).
It takes an hour.

RECIPE BELOW:
  • 800g salt cod (pre-soaked in water for a couple of days)
  • 7tbs olive oil
  • 2 large red onions, sliced
  • 4 garlic cloves
  • 2 green peppers, sliced
  • 12 waxy potatoes, peeled and roughly chopped
  • 2 bay leaves
  • juice of 1 lemon
  • 2 handfuls chopped parsley
  • 4 tbs black olives
  • 3 ripe tomatoes
  • 3 hard-boiled eggs, sliced
Simmer the cod for 15-20mins, until it starts to flake.  Then drain, break into large chunks & remove any bones once it's cool enough to handle.  Mix with a little of the olive oil to stop it from drying out.

Cover the potatoes with cold salted water, bring to the boil & then simmer for 5mins.  Drain.

Fry the onions in the oil until light brown, then add the garlic & peppers for another few minutes.  Add the potatoes, the lemon juice, half the parsley, the fish, and some fresh ground black pepper.  Stir through gently & then put everything in an oven-proof dish.  Bake at 180 for 30mins, then sprinkle over the olives & tomatoes, and return to the oevn for 5mins more.  Nearly there....

Remove from the oven & scatter over the egg (if using) & the rest of the parsley.  Drizzle with the best Olive Oil you've got.

David Eyre suggests a bowl of green salad to go with it.  And you know what, he's right.
