Pan fried salt-cod with Watercress & a Green Chilli Sauce

With a cold beer on the side, this is my idea of heaven.

For the Chilli sauce:
  • White wine vinegar
  • Green chillis
  • Sugar
 For the Salt Cod:
  • 150g salt cod per person, (pre-soaked in clean cold water for 2 days or so)
To make the sauce, warm up some vinegar  in a pan.  Gently simmer some chopped green chillis (leave the seeds in if you like the heat) & then add sugar to taste.  I add roughly 3tbs sugar & 10 chillis to 200ml of vinegar.  Allow to cool, or chill. Don't try the sauce while it's still hot, it's acid & will make you cough like crazy.

Simmer the cod in enough milk to just cover it, for 10mins. Then drain & allow to coo and pat dry. Remove any bones.  Gently fry up large bite-sized pieces of salt cod in a few table-spoons of olive oil, until nicely golden.  Drain on kitchen paper & then eat with great bread, water-cress & chilli sauce. Oh and a very cold beer.
