Leek Mash with Boudin Noir

I came across this nice use for Boudin Noir sausage.  You can obviously use any blood sausage/black pudding.

RECIPE BELOW:


Boil chunks of potato for 15mins until soft.
Add chopped leeks to the water 8minutes before the time is up.
Fry cube of the sausage in a dry pan until crispy
Mash the potatoes & leeks with a knob of butter & enough milk for a good consistency.
Stir through the sausage.

Eat with normal sausages & some nice irony greens.  Wow, two rounds of sausages in one meal!  (Not recommended for people with heart conditions...)
