Juniper Chops & Apple Sauce

This is a Nigel Slater jobbie.  It's very simple, but gives a tiny twist to a mid-week quick dinner.

RECIPE BELOW:

SERVES 2

For the chops:
  • 2 large pork chops
  • 10 juniper berries
  • 50g butter
  • 1/2 lemon
  • 250ml white wine
For the Apple Sauce:
  • 3 apples
  • 1/2 lemon
  • 1tbs sugar
  • 2-3 tbs water
Peel and slice the apple into thick chunks. Cook them over a low heat with the water, sugar & juice from the 1/2lemon.  Cook until soft, but not completely collapsed.

Bash the juniper berries in a pestle & mortar, then mix with the butter & the lemon juice.

Warm a pan with a few tbs of olive oil, then add half the butter.  Fry the chops for 5-6mins on each side, until golden brown. Put on warm plates.

Mash the apples.

Tip away most of the fat from the frying pan, turn the heat up high & add the wine. Stir it to deglaze the pan and get all the tasty caremalised bits. Bubble until nearly gone.  Put the remaining butter on the chops and then cover with the juices from the pan.

Eat with the apple sauce.
