Taramasalata

This is the real McCoy and not pink like shop bought ones.   Don't be temped to use a good olive oil, it will all be way too strong.  If it still turns out too strong, keep adding bread to tame it.

RECIPE BELOW:

2 slices stale bread
1/2 red onion
125g tarama (smoked cod's roe)
325ml light olive oil
Juice of 2 lemons

  1. Soak bread in water and then squeeze out as much water as possible.
  2. Grate the onion, then squeeze the pulp into a  bowl.  Keep the juice, throw the pulp.
  3. Blend the roe with the oil, a little at a time, like making mayonnaise.  If it looks like it's curdling, add a little lemon juice.
  4. Then blend in the rest of the lemon & onion juice.
  5. Add a few drops of warm water it's too thick.
  6. Chill at least 2 hours.
  7. Eat.
It can be quite strong, so don't be tempted to use more roe than this!

Some recipes use cooked potato instead of bread.  I haven't tried this, but will next time.  Sounds good.

It will last for a couple of days in the fridge.  It's probably not worth risking longer.
