Acili Ezme - Turkish tomato Mezze

This is a great Turkish Meze dish that can be eaten with bread or other small dishes.  It's also perfect alongside some grilled fish or meat.  It's basically a salsa, but strong and fresh tasting thanks to the pomegranate and sumac.

RECIPE BELOW:

3 tomatoes, discard the seeds, very finely chopped
1/2 red or white onion, very finely chopped
1 cup parsley, very finely chopped
2 tbsp extra virgin olive oil
1 tsp pomegranate paste or Granadine syrup
2-3 tbsp lemon juice
1 tsp cayenne pepper
1 tsp sumac
Salt to season

Put the onion with the sumac and a small amount of salt.  Roughly scrunch it all with your hands to break it up and draw out the juice.  Leave for 10mins and pour away any liquid in the bowl.

Then add all the other ingredients, stir it up, and leave for an hour in the fridge.  That's it...
Damn tasty it is too.
