Spinach Bhajee with ginger
This is based on a Pru Leith recipe.
I upped all the spices, the tomato & the onion.
RECIPE BELOW:
2lb spinach, cooked & roughly chopped
3 tbsp sunflower oil
1 big onion
2 green chillis, de-seeded & finely chopped
4cm-ish.. of grated fresh ginger
2 cloves garlic (crushed)
1 tsp ground cumin
2 tsp ground coriander seeds
6 cardamon pods
2 tomatoes, de-seeded and sliced
Fry the onion in the oil on a medium heat until golden.
Lower the heat & add the spices. Stir through for 1 min.
Add the tomatoes & cook for 2mins.
Then add the spinach and cook for 4mins.
Season with lots of salt & pepper & eat.
Serves 4.
Not bad at all!
You can add cooked potatoes, or do this to any cooked veg.
It's good for leftovers.
