Pan-fried Garlic Aubergines

Inspired by the delicious lamb & aubergine stew I had cooked for me the other night (Thanks Ben &Rachel!) I dug out this aubergine recipe I love.

This is so easy & really good!  It's from a Nigel Slater book, "The 30 Minute Cook"  I had given to me when I was a student.   It makes a great side dish for fish/meat, or just with some crusty bread & a glass of wine.  As a student it was probably accompanied by rice and a 4-pack of McEwans Export...



RECIPE BELOW:

  • 1 Large aubergine(egg-plant for those in the US), chopped into 2cm(ish) cubes
  • 4 tbs olive oil
  • 2 cloves garlic (leave the skin on & slightly squash them)
  • some rough chopped parsley
Serves 2 (or 4 if with another side-dish)
Takes 15mins

Fry the aubergine in the oil, on a medium heat, in a single layer until golden brown.  Do two batches if you don't have a big enough pan.  Drain them on some kitchen paper then season with salt & pepper & the parsley.

You can eat them with a drizzle of lemon juice as they are.  Delicious.

Or...

Mix some natural yoghurt with some chopped coriander & some grated ginger to taste.  Then stir in with the aubergine. 

Or....

You can fry the aubergine in whatever herbs & spices you like.  I love it with ground up cumin, red-chillies & coriander seeds.  It's also good with fried onions, ground up cinammon sticks & chopped cooked spinach.

There is an awesome dish this has reminded me of.  I'm going to go and look it up.  I must buy more aubergines!
